Ed's farm produces high quality seed for chilis. Including Hatch, NM Home of Hatch chilis. But his focus is on genetics. Creating a stable heat for a growing market.
Ed developed a pepper with mild heat, known as Arizona 20. Its the standard for green and red chili in the US.
Ed goes deep into the science of 'gene packages' to develop various types of chilis. And the placenta wall, the lining that gives the peppers heat.
Sampling some of the pepper mutations. More into the science and genetics of what Ed figures out to create types of peppers.
He compares it to building with Lego blocks.
Ed sells his seed all over the world, including the 'Chili Belt' in the western US.
They furnish about 90% of the chili seed market.
