Desert Durum Wheat was nothing more than a rotation crop until plant breeders came in to improve it.  Eric talks about the chain of events to being used in some of the best pasta in the world!

The Arizona enviroment provides great conditions.  Except the wheat doesn't like to get rained on.  Eric explains why.  How the color and strength is crucial to great pasta.

Desert Durum Wheat is more sustainable that other crops.

Arizona doesn't lose many crops due to the great weather compared to other parts of the country.  In Iowa, a farmer lost money due to a 'derecho' weather event.

Desert Durum enters the market 3 months before other durum crops.  Discussion of the robust export market to Italy.

Desert Durum is used more to enhance products.  100% won't work because its too dense.

Planting times around Arizona varies due to low climate conditions.  And very flexable to other crops.  Producing how many bushels per acres varies.
