Romero Family Recipe | Seasoned Pecans!

A signature dish at the Romero household during the Christmas season is Baby Kay's Cajun-Seasoned, Roasted Pecans. These Seasoned Pecans are in high-demand this time of year. We give them to our friends, family; we even set them out as a nice little snack. Setting a dish of these out on the counter top while cooking dinner is a great way to keep eager-fingers and sneaky-snackers from picking at the main dish!

The great thing about baking the Seasoned Pecans is that they are very versatile! For example, Rosie likes his pecans with more spice and roasted to a dark color, whereas Jennifer likes her pecans with a little less spice and cooked to a golden color.

The following recipe for Spiced Pecans is the way we like it; be sure to adjust the seasoning to fit your family's preferences/dietary needs:

Ingredients

  • 4 Cups of Pecan Halves
  • 7 Tablespoons of Melted Butter
  • 1/2 Teaspoon of Garlic powder (or to taste)
  • 1 Tablespoon of Cayenne Pepper (or to taste)
  • 1 Teaspoon Salt (or to taste)

Roasting Directions

  • Mix the melted butter and seasonings together
  • Spread pecan halves in a single, thin layer on a baking sheet.
  • Season pecans with your seasoned butter mix (salt, garlic powder and cayenne pepper; as much or as little as you like). 
    • Pour the butter over the seasoned pecans. Roll the pecans in the butter so all sides are coated.
  • Preheat the oven to 250
  • Bake for 20 minutes at 250 degrees. After 20 minutes, flip the pecans and bake for another 20 minutes. Be sure to keep an eye on them to achieve your preferred roasty-toasty doneness 
  • If you like crisper pecans, leave them in the oven for up to 10 more minutes. Test frequently if going extra crispy.
  • Store roasted pecans in an airtight container; maybe stash a container away for a special chef treat.
